100% Chardonnay from a single plot at 300m altitude in Haute Vallée de l'Orb. The whole batch ferments together with indigenous yeasts — elevage in three vessels: stoneware, old wood and stainless steel. Complexity without intervention. About 2,000 bottles per year.

Karaktär
Ginger, jasmine and crisp wild pear on the nose. Fresh and mineral with citrus notes and a chalky minerality. Well-balanced with fresh acidity and a long, elegant finish with nutty complexity from the wood and stoneware.
