White natural wine from Languedoc is an underrated category — often made from local grapes such as Terret, Bourboulenc, Grenache Blanc and Vermentino, with wild fermentation and minimal intervention. The climate gives sun-ripe fruit, but altitude and proximity to the sea can provide the freshness that keeps the wines alive rather than heavy.
Without added yeast and with low or no sulphur, the white grapes express their place clearly. Styles range from light and citrus-driven to more textured and almost nutty when the producer works with longer skin contact or older oak — but always within natural wine's boundaries.
