White biodynamic wine combines biodynamic vineyard philosophy — soil health, biodiversity and farming according to biodynamic principles — with Languedoc's natural strengths for white grapes: long growing season, coastal influence and cooler altitude sites that give freshness and aroma.
In the glass you'll find everything from clean, citrus-driven wines on Vermentino and Grenache Blanc to more textured bottles with short skin contact or oxidative handling. Biodynamic farming is about the whole vineyard; in the cellar producers often work with low intervention, giving whites with clear sense of place rather than a standardised style.
Shellfish, grilled fish, salads, goat's cheese and lighter chicken dishes. More textured wines also suit baked vegetable dishes. Serve chilled, around 10–12°C.
